Zesty Broccoli Soup
Yes we know, why would you eat broccoli soup?? But trust us- this soup tastes amazing! It is extremely healthy, and a great way to get some extra vitamins. We eat it as is for a warm, hearty, appetizer, but occasionally we will add some protein (usually chicken) and make it a meal. We also like to make it pretty spicy, but feel free to leave out the red pepper flakes if you want something more mild.

PREP TIME: 10 MINUTES COOK TIME: 10 MINUTES
INGREDIENTS:
2 heads of broccoli
1 yellow onion
3 scallions
½ cup basil
½ cup cilantro
2 cloves of garlic
1 jalapeno, seeded
1/2 cup toasted pine nuts
3 ripe avocados
4 cups of water
Salt
Pepper
½ cup white wine
¼ cup of chopped cilantro (topping)
Red pepper flakes (topping)
PREP:
Roughly chop broccoli by cutting all of the florets off of the stem.
With a vegetable peeler, peel the rough skin of the outside of the broccoli stem, leaving the insides. Cut stem into 1-inch sized pieces and set aside.
Prepare the onion by peeling off the outer skin and roughly chop into large pieces.
Chop off the roots from the green onions (bottom inch) and roughly chop the onion into 1-inch pieces.
Cut the stem off the jalapeno, and then cut in half (lengthwise) and remove the seeds. If you want a spicier soup you can keep the jalapeno seeds intact.
COOK:
Add chopped broccoli & stem, onions, jalapeno, peeled garlic, and scallions to the saucepot and add 4 cups of water. Sprinkle with a pinch of salt (1 tsp) and bring to a boil.
Cover and let cook for 10-15 minutes on high or until the vegetables are fork-tender. After the veggies are soft and tender, separate the veggies from the liquid and place the cooked veggies into a blender.
Keep the water liquid for later in the soup making process. Add avocados, pine nuts, salt, pepper, wine and herbs to the blender.
PREPARE THE DISH FOR DATE NIGHT:
Once all the ingredients are in the blender, carefully blend the soup.
*Note-Hot liquids in the blender will build up pressure and will pop off your lid/ explode mixture all over your kitchen. If your blender top has a hole in the top lid, cover the hole with a towel as you blend the hot mixture so the pressure can escape. If your lid does not have a hole, slightly remove the lid from the top of the blender so some air can escape and then cover with a towel as you blend. Blend until combined.
If the soup mixture is too thick, add some of the reserve water until you reach your desired soup consistency. For a thicker soup, you should not need any additional liquid, but if you are going to make a thinner soup start by adding ¼ cup of water at a time during the blending process.
Add salt and pepper to taste. We usually use 1 tsp of each to start. Add pine nuts, cilantro, red pepper flakes, and olive oil to finish.
