Apple Crisp

INGREDIENTS:

  1. ½ cup coconut sugar 

  2. 1 cup rolled oats

  3. 1 cup almond flour

  4. 5 tbs ginger

  5. 2-3 apples

  6. ½ lemon juice

  7. 1 tsp vanilla

  8. 1 tsp ground cinnamon 

  9. 2 tsp kosher salt

  10. ½ cup coconut oil

  11. 2-3 tbs water

PREP:

  1. Heat oven to 350. Peel the apple, cut lengthwise and take out the core. Cut apples into ¼” slices. Over a mixing bowl grate the ginger and then add the apples. Add ¼ cup of coconut sugar, vanilla, salt and lemon juice to the bowl. Mix to combine. Let the apples sit while you make the crisp topping. 

  2. In a separate bowl add oats, almond flour, cinnamon, remaining sugar, and salt. Mix to combine. Next add the melted coconut oil stir in completely. The mixture should be a little sticky, if the mixture is looking a little dry you can add 1 tbs of water at a time until the topping is sticky to the touch. This will help form a better crust on top of the apples. In two small cast iron skillets, evenly distribute the apple mixture.

  3. Next, cover apples with your oat topping. Put in the oven and bake for 45 minutes. If the top is getting too brown too quickly, you can cover it with aluminum foil to keep it from burning. Sever hot, a scoop of vanilla ice cream or some homemade whipped cream for bonus points.
