Homemade Awase Dashi (Broth)

This broth is used in our Loaded Miso Soup, however many people also love to use it for their homemade ramen or vegetable soup recipes.

SERVING SIZE: 2 DIFFICULTY LEVEL: BEGINNER

PREP TIME: 5 MINUTES COOK TIME: 25 MINUTES

INGREDIENTS:

  1. 1 tbs ginger

  2. ⅔ cup of Wakame seaweed

  3. 16 cups of water

  4. 2 cups bonito flakes

  5. 1 tsp salt

  6. 2 tbs coconut sugar

  7. 4 tbs tamari

  8. A fine strainer or a cheesecloth

PREP:

  1. In a large sauce pot, bring water to a simmer (not a rolling boil).

  2. Cut ginger into matchstick pieces and add to the water.

 
 
 

COOK:

  1. Once your water is consistently simmering (small, nonviolent bubbles) add your seaweed and let simmer for 10 minutes.

  2. Add bonito flakes and let steep for 5 minutes.

  3. Take the broth off the heat and let sit covered for 10 minutes before straining.
