Brownie Batter Date Bars

SERVING SIZE: 3-4 DIFFICULTY LEVEL: BEGINNER

PREP TIME: 20 MINUTES COOK TIME: 35-45 MINUTES

INGREDIENTS:

Brownie Batter:

  1. 20 medjool dates (pitted)

  2. ½ cups of walnuts2 scoops of protein powder

  3. 2 tsp vanilla extract 

  4. 2 tbs water

  5. 1 tbs raw honey

  6. 3 tbs cocoa powder

  7. 2 tsp chia seeds 

  8. ½ cup of almonds 

Topping: 

  1. ¼ cup of shredded coconut

  2. 1 tsp of cacao powder

  3. ½ tbs of kosher salt

  4. ¼ cup of almonds

PREP:

  1. Add walnuts to a high powered blender or food processor and pulse until roughly chopped. Add dates, water, vanilla, and honey, and blend until uniform and smooth. Add in the protein powder, cocoa, and chia seeds, blend until combined. 

  2. In a separate bowl, add all of the topping ingredients (coconut, cacao powder, kosher salt and almonds). Put this mixture into a food processor to chop into a fine powder. 

 

COOK:

  1. Line a bread pan (8x8), line with parchment paper.

  2. Sprinkle half of the almonds on the bottom of the pan, add date mixture and work around the pan until uniform.

  3. Sprinkle the remaining almonds on the top and refrigerate for at least one hour for best results.

ROLL THE BALLS:

  1. Pull off golf-ball sized chunks of the mixture and roll into a ball. Roll the ball into the topping mixture.

  2. Set ball aside and repeat until you have used all of the refrigerated mix.
