Greek Yogurt Carrots

SERVING SIZE: 4 DIFFICULTY LEVEL: Intermediate

PREP TIME: 15 MINUTES COOK TIME: 15 MINUTES

INGREDIENTS:

  1. 6-7 carrots

  2. ¾ cup greek yogurt 

  3. 2 tsp aleppo pepper flakes, or 2 tsp red pepper flakes

  4. 1 tsp smoked paprika

  5. 2 tsp kosher salt

  6. 3-4 tbs vegetable oil

  7. Juice of 1 lemon

  8. 3 green onions

  9. ¼ cup pine nuts

  10. ¼ cup macadamia nuts

  11. 2 tbs sesame seeds

  12. 1 tsp black pepper


 

PREP AND COOK:

  1. Place the broiler on high and place the cooking rack 2-3 inches away from the broiler. Cut the ends off the carrots and wash thoroughly. Cut diagonally in 2-3” pieces. In a large sauté pan, add vegetable oil and set over medium high heat. Cook carrots on the stove for 5 minutes, stirring frequently. Place the entire pan under the broiler and cook for 10 minutes. 

  2. Prepare the nut medley by toasting pine nuts, macadamia nuts and sesame seeds for 5 minutes over medium heat. This will warm the natural oils in the nut to enhance the nutty flavor. Once toasted add to a food process and blend with salt and pepper until uniform.

  3. Prep the sauce by mixing together the lemon juice, yogurt, and the remaining spices. 

  4. After the carrots are done cooking, toss with the nut mixture and serve hot overtop of the yogurt sauce. Sprinkle some chopped parsley on top and serve.
