Honey Lemon Slaw

SERVING SIZE: 4-6 DIFFICULTY LEVEL: BEGINNER

PREP TIME: 15 MINUTES COOK TIME: 5 MINUTES

INGREDIENTS:

  1. ½ red cabbage

  2. ½ green cabbage 

  3. 2-3 carrots 

  4. 2 tbs honey

  5. 1 tbs apple cider vinegar

  6. Juice of 2 lemons

  7. Salt and pepper to taste

 

PREP:

  1. Remove any damaged leaves from the outside of the cabbage and then cut into quarters.

  2. At an angle, you will want to cut off the main stem (core, big white piece) from the bottom of the wedge. Once removed, slice the cabbage into very thin shreds.

  3. Next, prepare the carrots by peeling off the outside skin and cutting off the top. Cut into similar slices as the cabbage, the thinner the better.

  4. Prepare your vegetables and place into a large mixing bowl. Add your remaining ingredients and toss until coated. Let sit at least 30 minutes prior to serving.
