Mediterranean Salmon Salad

SERVING SIZE: 2 DIFFICULTY LEVEL: EASY

PREP TIME: 15 MINUTES COOK TIME: 12 MINUTES

INGREDIENTS:

  1. 2/3 cup of kalamata olives

  2. 1 cup of feta cheese

  3. 1 cup diced cucumbers

  4. 1 cup of sliced tomatoes

  5. 2 cups of  cooked couscous 

  6. 1 red pepper 

  7. Spring Mix Salad

  8. 2 8 oz salmon fillets

  9. 1 Lemon 

  10. 2 tbs Balsamic vinegar

  11. 3 tbs olive oil


 

PREP:

  1. Preheat the oven to 375F. On a greased baking sheet place salmon fillet, sprinkle with salt and pepper.

  2. Thinly slice a lemon and place on top of the fillet, bake for 7-10 minutes until fillet reaches an internal temperature of 145F.

  3. Cut feta, red pepper, olives, cucumbers and tomatoes into bite sized pieces.

  4. Cook couscous according to box instructions and let cool. 


COOK:

  1. Add chopped ingredients and spring mix into a large mixing bowl.

  2. Add cooled couscous and mix to combine.

  3. Drizzle on 3 tbs of olive oil and 2 tbs of balsamic vinegar, mix to coat evenly.

  4. Plate mixture and place a salmon fillet on top, enjoy!
