INGREDIENTS:

  1. 2 yellow onions finely chopped

  2. 32 oz of both Crimini mushrooms and baby Portabella mushrooms

  3. 1 tsp thyme

  4. 1 tsp oregano

  5. 1 tsp umami (Can be found at Trader Joes, it’s a nice to have but 100% needed)

  6. Salt and pepper

  7. 4 tbs olive oil

  8. 4 cloves of garlic

  9. 1 ½ cup breadcrumbs

  10. ½ cup quick oats

  11. 3/4 cup parmesan cheese

  12. 3 eggs

  13. ½ cup vegetable broth

COOK:

  1. This will give the meatball a “meatier” texture. Heat oven to 400F. Roll mixture into uniform sized balls. I like to roll mine into a golfball size or slightly larger.

  2. The larger the ball, the more cooking time necessary.

  3. Add rolled balls on to a greased baking sheet and cook for 20 minutes, flipping balls halfway through. Serve hot.
