Mushroom Meatballs
These mushroom “meatballs” will make you rethink your traditional meatballs.
SERVING SIZE: 4-6 DIFFICULTY LEVEL: INTERMEDIATE
PREP TIME: 35 MINUTES COOK TIME: 20 MINUTES
INGREDIENTS:
2 yellow onions finely chopped
32 oz of both Crimini mushrooms and baby Portabella mushrooms
1 tsp thyme
1 tsp oregano
1 tsp umami (Can be found at Trader Joes, it’s a nice to have but 100% needed)
Salt and pepper
4 tbs olive oil
4 cloves of garlic
1 ½ cup breadcrumbs
½ cup quick oats
3/4 cup parmesan cheese
3 eggs
½ cup vegetable broth
COOK:
This will give the meatball a “meatier” texture. Heat oven to 400F. Roll mixture into uniform sized balls. I like to roll mine into a golfball size or slightly larger.
The larger the ball, the more cooking time necessary.
Add rolled balls on to a greased baking sheet and cook for 20 minutes, flipping balls halfway through. Serve hot.
