Over Easy Breakfast Sandwich
SERVING SIZE: 1 DIFFICULTY LEVEL: INTERMEDIATE
PREP TIME: 20 MINUTES COOK TIME: 30 MINUTES
INGREDIENTS:
2 eggs
½ tsp salt
½ tsp pepper
Goat cheese
Arugula
2-3 tsp of Sirracha
⅓ cup of Greek Yogurt
1 tbs olive oil
2 slices of bread
2 slices of my Money Bacon (link here)
PREP:
I like to use a country loaf for this sandwich because it is a hearty piece of bread, full of flavor. Toast your bread to desired crispness. If you don’t have a toaster you can toast your break under the broiler in the oven, but be careful, you can go from golden brown to black and burnt in no time.
To broil your toast, turn the broiler on low. Lightly oil the bread and place under the broiler. It should be about 2-3 inches from the broiler. All broilers are different, but burn forgotten about toast, all the same. You should need about 2 minutes per side.
COOK:
As your bread toasts, mix sriracha and greek yogurt to make a creamy sriracha spread. When ready, apply a generous amount of sriracha spread on one side of the bread and cover the other with goat cheese.
Add arugula and begin cooking eggs. Add olive oil to a sauté pan and place over medium heat. If the oil begins to smoke, your pan is too hot and should be turned down. I like to use a non stick pan for added success during the egg flip.
PLATE YOUR DISH:
Crack eggs onto its surface of the pan and cook until just set. The egg around the yoke should almost turn white before gently flipping.
After you flip, cook for an additional 20-30 seconds more and then transfer your eggs on top of your arugula. Top your sammy, cut and enjoy.
