INGREDIENTS:

  1. 2 Rockfish fillets (or other white fish)

  2. 2 eggs

  3. ½ cup bread crumbs

  4. ½ cup sweet plantain chips, crushed

PREP:

  1. Put defrosted rockfish fillets on a plate with a paper towel and sprinkle with kosher salt (1 tsp). Place in the refrigerator and let sit for at least 10 minutes before cooking. This is a good step to do first while you prepare the rest of the dish.

  2. In a separate bowl mix and combine bread crumbs and crushed plantain chips.

COOK:

  1. Whisk 2 eggs in a bowl.

  2. Dip fish in egg mixture and coat with bread crumb mixture until evenly coated. Place on a baking sheet and cook for 8 minutes at 450F.

  3. Flip fillet after 4 minutes to get a golden crust on both sides.
