Plantain-Crusted Rockfish
This Rockfish recipe is a house favorite. It is great on its own, but it also pairs extremely well with our Serrano Avocado Sauce and Coconut Rice recipes.
SERVING SIZE: 2 DIFFICULTY LEVEL: INTERMEDIATE
PREP TIME: 15 MINUTES COOK TIME: 10 MINUTES
INGREDIENTS:
2 Rockfish fillets (or other white fish)
2 eggs
½ cup bread crumbs
½ cup sweet plantain chips, crushed
PREP:
Put defrosted rockfish fillets on a plate with a paper towel and sprinkle with kosher salt (1 tsp). Place in the refrigerator and let sit for at least 10 minutes before cooking. This is a good step to do first while you prepare the rest of the dish.
In a separate bowl mix and combine bread crumbs and crushed plantain chips.
COOK:
Whisk 2 eggs in a bowl.
Dip fish in egg mixture and coat with bread crumb mixture until evenly coated. Place on a baking sheet and cook for 8 minutes at 450F.
Flip fillet after 4 minutes to get a golden crust on both sides.
